Paddlefish meat is very mild in flavor and has no bones.  Its meaty texture is more like veal or pork than many fish you may have eaten.  In addition to its' delicious flavor, our farm-raised paddlefish are extremely low in mercury levels making them a very healthy choice of fish protein.
