Paddlefish are an ancient cousin to Sturgeon, one of the most revered fish in the world, and their meat and caviar is very similar in flavor. Although paddlefish are indigenous to our area, they are considered a threatened species. Because of this we use only F-1 broodstock and carefully document our fishes' "farm raised" status from birth to harvest. We proudly display the TRAFFIC-CITES International Seal of Approval.
By the time our fish are ready to produce caviar, they are at least 8 to 10 years old. We harvest caviar in the late winter only, so our production is seasonal. Please check the website for information regarding availability.
